Oysters

Locally sourced OYSTERS served at the Festival are from Milford’s own Briarpatch Shellfish Company.

Milford shores have been rich with oysters since the Native Americans inhabited Connecticut. When the Colonists arrived in the 1600’s they too enjoyed the local oysters. In the 1700’s and 1800’s local laws were put in place to preserve the oyster industry. With this came a growing industry that continues today.
